I made this mushrrom sidedish on the spur of the moment for a dinner I was hosting.  So yummy!

 

1 pound button or cremini mushrooms sliced

3 tbl olive oil

3 tbl unsalted butter

1/4 dry sherry or 1 tbl red cooking wine 

1 tbl terriyaki sauce or more for taste 

1 clove garlic sliced thin

2 cloves of garlic minced

1 1/2 tbl fresh thyme

1 tbl parsley torn

salt and pepper to taste

 

Heat butter and oil on medium high heat until the butter is melted.  

Add the mushrooms and cook for 5-6 minutes, flipping them over half way thru cooking time, add garlice and salt/pepper to taste 

Cook of an additional 5-6 minutes until they are richly carmelized

Stir in the thyme, sherry and wine

Lower the heat and to medium low and let simmer for about 10-11 minutes

You want the mushrooms to absord the juices leaving behind small glossy amount of moisture

Transfer to a serving dish, salt and pepper to taste and top with the torn parsley

Serve immediately
