Potato, Tarragon, Onion side dish

 A dear freind of mine had us over for dinner and made this side dish over 30 years ago.  I thought it was so delicious that it had never left my mind.

 

6 red potatoes

1 red onion

2 tbl fresh tarragon (or dried)

1 tbl olive oil

1 tbl unsalted butter

pinch of salt

pinch of pepper

 

Dice potatoes and onion.

Heat oil and butter in a cast iron (or non-stick) skillet. 

Add potatoes and onion.  Cook on medium high heat until done and crispy - about 10-12 min, flipping 1 to 2 times.  Add salt and pepper and toss.

Before removing from heat add Tarragon and toss in skillet.

 

Transfer to serving platter and enjoy!
