Small muffin pan
Small ice cream scoop or rounded tablespoon
Pam cooking spray
Ingredients:
3 cups whole wheat oats – I use Grand Value
¼ cup of peanut butter – I use Skippy
¼ Tsp cinnamon – I use McCormick
2 whole eggs – I use Cage free (with the market as it is any egg would be fine)
½ can of pumpkin puree – I use Libby’s – I have also used unsweetened applesauce, fresh pureed apples and carrots. Gerber’s Baby food is also another alternative.
Pre-heat oven at 350
Gather ingredients. Mix the oats with the peanut butter, add the cinnamon, the eggs and the pumpkin.
Spray muffin pan and ice cream scoop or tablespoon.
Fill muffin pan, level muffins (I push down on each one once filled)
Bake for 26 min, set aside and let cool.
